This is from back in September, but it’s worth revisiting. CBC did a feature where they revealed the recipe for our Paris Brest:
If you are standing in line to order, would you be embarrassed to say “I’d like a Paris Brest, please?” That’s the current theory amongst the staff at Duchess Bakeshop on why no one orders it. “It’s the staff favourite, but almost no one order it” says Giselle Courteau, Duchess co-owner. Despite my countless visits to Duchess, I, too, had never ordered it, but only because it looked like a donut. I was very wrong.
We are open in our new space!! Lots of seating, new goodies and Garnet on bar making tasty coffee. Come down and visit us!
Thank-you to all the familiar faces & usual suspects who stopped in today, it was truly overwhelming to feel the support of so many friends & neighbours!
This is it! We will be closed Tuesday and Wednesday to finish up our renovations. We’re so proud of the amazing work Garner and his crew of guys have done. The shop looks more beautiful than we ever imagined. We can’t wait to show off our new space!

Kassandra gives Duchess a great a profile in her latest blog post:
The Salgado preview was set at Duchess Bake Shop on 124 Street downtown. Their delicious treats and beautiful decor was the perfect backdrop for Genette’s preview. They have a wide selection of scrumptious treats, including: macarons, cookies, cakes, and meringues. My new favourite is the Paris-Brest. I can’t explain to you how mouthwatering this treat is. I suggest you stop by, you won’t be disappointed.

We are in need of a part-time early evening/weekend dishwasher. This is a perfect job for a student! E-mail resumes to info@duchessbakeshop.com if you’re interested. Thank you!
Traditional French Bûche de Noël just in time for the holidays. Available starting next week. You will definitely want to pre-order for one of these.
Garner Beggs has just built a 1:100 scale gingerbread Notre Dame de Paris for the shop window. He did all the baking, piece cutting and pasting by hand. It is breathtaking; please come by to see it in person! More Photos via Facebook.
Lightside Photography is doing a blog series called “30 Days of Edmonton.” On Day 8, they featured Duchess Bake Shop, and a really in-depth interview with Garner. The interview covers the history of the shop, and how it was originally inspired. Here’s Garner talking about ingredients:
“The butter we get is from New Zealand, it’s amazing stuff, the Canadian butter by contrast just doesn’t cut it. It’s a 3 or 4 percent difference in butter fat content, which doesn’t sound like much, but it makes a big difference.”
Really great stuff. Thanks to Lightside for doing such a great job.
You can read the full interview, and see their amazing photos, here.
