Fleur de Sel

When weather conditions are just right, crystals of pure salt form on the surface of the sea. These crystals, called fleur de sel (salt blossoms), are harvested from small boats. Use this delicate and delicious salt in pasta cooking water, on salads, on foie gras—or to finish any dish where the flavour of the salt is an important element.
